[One Discover] Add documentation for logs profile heuristics

WIP.

We should add documentation to the Kibana docs indicating what a Discover profile is, and which heuristics are used to resolve logs profiles in Discover. For example, we resolve the logs data source profile based on the index pattern of the current ES|QL query or data view.
