The quick and dirty solution is this:

arch -x86_64 brew install oracle-jdk
brew install apache-directory-studio

any idea of pulling this off without oracle-jdk (using anything but the oracle one?)

For those who stumble upon the exact same problem.

I followed this guide: https://blog.gnu-designs.com/running-apache-directory-studio-on-apple-m1-cleanly/
and installed the jdk Temurin with version 20 for x64. LINK

When I tried to arch -x86_64 brew install oracle-jdk I got an error:

Error: Cannot install under Rosetta 2 in ARM default prefix (/opt/homebrew)!
To rerun under ARM use:
    arch -arm64 brew install ...
To install under x86_64, install Homebrew into /usr/local.

What makes sense, because brew installation path changed from intel chips to apple silicon.
